Boiling, Simmering & Blanching — What's Actually Different
Boiling isn't just "water, hot." Salt levels, temperature control, and the shock of an ice bath are what separate mushy vegetables from restaurant-crisp ones.

What you'll need
- A large pot
- A spider or slotted spoon
- A bowl of ice water for blanching
Salt the water like it's the sea
This is the single most-skipped step in home cooking. Water for pasta or vegetables should taste distinctly salty on its own — about 1–2 tablespoons of kosher salt per gallon. The food only picks up seasoning from what's touching it while it cooks; you can't fully fix bland pasta after the fact with sauce.
Know the three temperatures
- Boil (212°F): violent, rolling bubbles. Reserved for pasta, blanching, and reducing sauces fast.
- Simmer (180–190°F): gentle, steady small bubbles. This is where most braises, stocks, and beans actually belong — a hard boil toughens meat and clouds stock.
- Poach (160–180°F): barely a shiver on the surface. For eggs, delicate fish, and fruit — anything that would fall apart or turn rubbery at a higher heat.
Don't crowd the pot
Adding a lot of cold food at once drops the water temperature and the pot takes a long time to recover — everything sits in lukewarm water instead of actually boiling. Work in batches, or use a much bigger pot than feels necessary.
Cold start vs. hot start — it's not random
- Start in cold water: root vegetables and potatoes. They cook from the outside in; a cold start lets the center finish at the same time as the outside instead of the outside turning to mush first.
- Start in already-boiling water: leafy greens, green beans, asparagus — anything you want to stay bright and crisp-tender. A slow warm-up gives chlorophyll time to break down and dull the color.
Blanch and shock
For vegetables you'll finish later (a sauté, a salad, a gratin), boil briefly, then plunge immediately into ice water. This stops the cooking instantly, locks in color, and means you're not overcooking them a second time when you reheat.
The pasta water myth
Oil in the pasta water doesn't stop sticking — it floats on top and does nothing underwater. It *does* coat the noodles once drained, which stops sauce from clinging to them. Skip it; stir the pasta in the first minute instead, when it's most likely to stick together.
