Dry brioche cubes overnight uncovered, or bake at 300°F for 10–12 minutes.

Whisk eggs with milk, cream, Dijon, salt, pepper, onion powder, garlic powder, dry mustard, and chives.

Layer bread, ham, and cheddar in two layers in a sprayed half-size foil pan, leaving some bread visible on top.

Slowly pour the custard evenly over the casserole and gently press the bread into the custard without compacting it.

Cover tightly and refrigerate at least 2 hours, preferably overnight.

Bake directly from the refrigerator at 350°F covered with foil for 35 minutes, then uncover and bake 20–25 minutes more until the internal temperature reaches 165°F, the center is set, and the top is golden.
