  • 8 ozfresh mozzarella, sliced
  • 2 tbspfresh basil, chiffonade, for garnish
  • 1 lbspaghetti, for serving (optional)

    Pound chicken cutlets to an even 1/2-inch thickness. Season both sides with salt and pepper.

    Set up a breading station: flour in one dish, beaten eggs in another, and breadcrumbs mixed with 1/4 cup Parmesan in a third.

    Dredge each cutlet in flour, dip in egg, then press into breadcrumb mixture to coat evenly.
