  • 1 bottle(750ml) of chilled champagne or sparkling wine
  • 1½ cupsof freshly squeezed orange juice
  • ½ cupof freshly squeezed grapefruit juice
  • ¼ cupof nonalcoholic triple sec (see recipe)
  • 2 tablespoonsof honey
  • 1Thin grapefruit slices for garnish

    Chill the champagne or sparkling wine, orange juice, and grapefruit juice thoroughly in the refrigerator before mixing — a cold mimosa holds its bubbles best.

    In a small pitcher, whisk together the orange juice, grapefruit juice, nonalcoholic triple sec, and honey until the honey is fully dissolved.

    Pour about 2 ounces of the citrus mixture into the bottom of each chilled champagne flute.

    Top each glass slowly with the chilled champagne or sparkling wine, pouring at an angle down the side of the glass to preserve the bubbles.

    Give each drink one gentle stir with a bar spoon to combine, garnish with a thin grapefruit slice on the rim, and serve immediately while cold and fizzy.
