Season beef strips with 1/2 teaspoon salt and 1/4 teaspoon pepper. Heat 1 tablespoon butter and the oil in a large skillet over high heat. Sear beef in batches, 1-2 minutes per side, until browned but still pink inside. Remove and set aside.

Add remaining 2 tablespoons butter to the skillet. Cook mushrooms and onion over medium-high heat until golden and mushrooms release their liquid, about 8 minutes.

Slowly whisk in beef broth, scraping up browned bits. Simmer until thickened, about 5 minutes.

Reduce heat to low and stir in Dijon mustard and sour cream until smooth. Do not let it boil once the sour cream is added, or it may curdle.

Return beef and any accumulated juices to the skillet, season with remaining salt and pepper, and warm through, 2-3 minutes.
