    Heat the bacon grease in a large, heavy pot or Dutch oven over medium heat. Add the smoked sausage and brown lightly, 3–4 minutes.

    Add the onion and bell pepper and cook 5 minutes, until softened. Add garlic and cook 1 minute more.

    Add the chopped cabbage in batches, stirring to wilt it down and coat it in the fat as it cooks down enough to make room for more.

    Pour in the chicken stock and stir in the Cajun seasoning and cayenne.

    Bring to a simmer, then cover and reduce heat to low. Cook 35–40 minutes, stirring occasionally, until the cabbage is very tender and silky, almost melting.

    Uncover for the last 10 minutes if the pot is too soupy, to let some liquid reduce down.

    Season with salt and black pepper to taste, and serve hot with hot sauce on the side.
