Heat the bacon grease in a large, heavy pot or Dutch oven over medium heat. Add the smoked sausage and brown lightly, 3β4 minutes.

Add the onion and bell pepper and cook 5 minutes, until softened. Add garlic and cook 1 minute more.

Add the chopped cabbage in batches, stirring to wilt it down and coat it in the fat as it cooks down enough to make room for more.

Bring to a simmer, then cover and reduce heat to low. Cook 35β40 minutes, stirring occasionally, until the cabbage is very tender and silky, almost melting.
