  • 1 tspkosher salt, plus more to taste
  • 2 cupslong-grain white rice, rinsed
  • 1packet sazón or 1 tsp achiote powder (optional, for color)
  • 3 1/2 cupswater (for the rice)

Method

    Heat 2 tablespoons olive oil in a pot over medium heat and sauté the bell pepper and onion until softened, about 6 minutes.

    Add garlic, cumin, and oregano and cook 1 minute until fragrant.

    Add the black beans with their liquid, bay leaves, broth, and vinegar. Simmer uncovered 25-30 minutes, mashing a few beans against the side of the pot to thicken the liquid slightly. Season with salt.

    Meanwhile, heat remaining oil in a separate pot, add the rinsed rice, and toast 1-2 minutes.

    Add water, sazón if using, and 1 teaspoon salt; bring to a boil, then cover and reduce to a low simmer 18-20 minutes until the rice is tender and the water is absorbed.

    Remove bay leaves from the beans.
