    Preheat oven to 350°F. Blanch fresh green beans in boiling salted water 5 minutes, then drain and plunge into ice water to stop cooking; drain again.

    Melt butter in a large skillet over medium heat; sauté mushrooms and onion until golden, 6-8 minutes. Add garlic and cook 1 minute more.

    Sprinkle flour over the mushrooms and cook 1 minute, stirring. Whisk in chicken broth and cream; simmer, whisking, until thickened, 4-5 minutes. Season with salt and pepper.

    Transfer to a buttered 9x13-inch baking dish; scatter cheddar over the top if using.
