Method

    Place the eggs in a single layer in a saucepan and cover with cold water by about an inch. Bring to a boil over high heat, then cover, remove from the heat, and let sit for 12 minutes.

    Drain the eggs and immediately transfer them to a bowl of ice water to stop the cooking; let them cool completely, about 10 minutes.

    Peel the cooled eggs and slice each one in half lengthwise. Gently pop the yolks out into a mixing bowl and arrange the whites, cut-side up, on a platter.

    Mash the yolks with a fork until fine and crumbly, then add the mayo, softened butter, yellow mustard, dijon mustard, sweet pickle juice, sugar, salt, pepper, and Tabasco if using.

    Mix until completely smooth and creamy with no lumps of yolk remaining; taste and adjust seasoning or pickle juice for tang as needed.

    Spoon the filling into a piping bag (or a zip-top bag with the corner snipped off) and pipe generous swirls into each egg white half.

    Dust the tops lightly with paprika and refrigerate for at least 15-20 minutes before serving to let the flavors set.
