Method

  1. 1

    1. In a large stockpot, melt the butter over medium heat.

  2. 2

    2. Add the shredded carrots and shredded onion and cook, stirring occasionally, for about 10 minutes until softened and beginning to turn translucent.

  3. 3

    3. Pour in the chicken broth and stir in Mr. Jimmy's Seasoning and the Dixie Dust.

  4. 4

    4. Bring to a boil, then reduce to a simmer and cook uncovered for about 20 minutes, until the carrots are tender.

  5. 5

    5. While the base simmers, drain and rinse the canned butter beans.

  6. 6

    6. Stir the butter beans into the pot, along with the pulled pork if using.

  7. 7

    7. Return the soup to a boil, then reduce the heat to low and simmer, stirring occasionally, for about 2 hours, until the broth has reduced and thickened slightly and the flavors have fully melded.

  8. 8

    8. Taste and adjust seasoning with additional Mr. Jimmy's Seasoning or Dixie Dust as needed, then serve hot.
