Method

    Preheat oven to 425°F and line a large sheet pan with foil or parchment.

    Toss potatoes, carrots, and onion with 2 tablespoons olive oil, garlic, thyme, paprika, 3/4 teaspoon salt, and 1/4 teaspoon pepper on the sheet pan, spreading in an even layer.

    Pat chicken thighs dry and rub with remaining 2 tablespoons olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Nestle chicken skin-side up among the vegetables.

    Roast 20 minutes, then scatter broccoli florets over the pan and tuck lemon slices around the chicken.

    Continue roasting 12-15 minutes more, until chicken skin is golden and reaches 165°F internally and vegetables are tender.
